Walking is the perfect way of moving if you want to see into the life of things. It is the one way of freedom. If you go to a place on anything but your own feet you are taken there too fast, and miss a thousand delicate joys that were waiting for you by the wayside. Elizabeth von Arnim

No walk for me today

✿     ✿     ✿     ✿
I missed my walk this morning - no time.  Ken had an eye doctor appointment and we had to leave early before I could walk.  We still go to the doctor where we used to live so it takes most of the day.  All went as good as expected at the doctors, his eyes are little bit worse but not bad.

Thought about walking this evening but it is just not the same and I'll just wait and walk in the morning.  I guess I can miss a day here and there.

I planted the celery in the raised garden with with lettuce. Took a picture but it didn't come out so I'll take another one tomorrow and post it.  The lettuce picture came out though.  I'm pretty sure it is green leaf lettuce but the package blew away so I can't be positive.  The lettuce looks nice but it is very bitter.  I don't know if it is just too early to eat it.  I've never grown lettuce before.

Lisa asked about the Bean and Spinach soup that I made yesterday that we had for supper this evening.  Didn't take a picture because though it tastes good the picture is not very appetizing.  I don't have a recipe so don't have exact measurements but this is how I make it.
Heat a little olive oil in large pot.
Add some crushed garlic and cook just for a bit.  We like garlic so I had about 5 or 6 cloves of it.
Add pepperoni.  The kind I buy looks like a sausage and I slice it thinly.
Add 2 cans cannellini beans undrained.  Add 2 cans of water.
Add 4 bags of baby spinach or enough to fill the pot.  It cooks down so it is heaping out of the top of the pot.
I'm not even sure how long I cook it but when the spinach turns a dark green color and is very soft it is done.
We eat it with a nice soft roll.
It is one of Ken's favorite meals.

Not much to write about today because we spent most of the day in the car.
Hope your day was a happy one.
Looking forward to my walk tomorrow. : )
Happyone : )

I dislike walking in the evening too Karen. In the morning I have much more energy.
I had an eye appointment too yesterday. Mainly because I want new glasses! No change in my eyes either.
Your lettuce looks great. Some varieties are rather bitter. I usually plant romaine along with other lettuces. It is a rather sweet lettuce.
Your Bean Soup sounds delicious!
Hope you have a great walk today. We are just heading out for ours!

Glad your husband's eye appointment went well. I don't know much about lettuce either. When I walk, it is usually in the morning when it's cooler although yesterday evening at about 7:30 it was lovely. I would have liked to walk more then but I was tired. Have a great day.

Thanks for the recipe! I will be making this soon. I made kale soup once using a veggie broth base and just cook the kale down. It was rather tasty too. Cant wait to try yours. Thanks again.

I've switched eye doctors more times than you'd believe.

Hello, miss you guys! Glad Ken's eye appointment went well! Can't wait to make your delicious bean soup. I'm going to copy, paste and print it and make my grocery list out for it. Probably won't be able to make it until I get back from vacation. Thanks for sharing! Love your blog! Have a wonderful blessed day! Hopefully see you tomorrow at Chester's!

Yes, we'll be there. I'm making chocolate chip cookies with peanut butter chips in them. Chester requested it. : )

I've never grown lettuce, yours looks healthy. An uncle used to grow lettuce and he'd serve it up on a plate with hard cheese, a few dozen greenfly and the odd ant! Have a wonderful walk in the morning and a brilliant weekend :)

Glad Ken's eye appointment went ok.

Your lettuce does look good and very green. You may find this article about 'Bitter Tasting Lettuce – Why Is My Lettuce Bitter?' interesting to read

All the best Jan

I didn't walk this morning either. My walking partner went camping and I got up early and went to a yard sale instead. I found a great little foot stool for the camper but didn't get the exercise I needed. It's too warm this time of year for afternoon walks.

Thanks for the link. I'll check it out.

Not too warm here to walk, I just like the mornings better and rarely go later in the day. : )
