A little change in my morning routine. I woke up late and didn't get out for my walk until just past 8:30. Before walking I ate breakfast, read my morning devotions, and had a load of laundry on the line outside.When I walked it was just a bit hazy but then sunny and beautiful. It was 50 degrees.
Walked down the main road towards HT a bit, around town, the cemeteries, and the ball park loop.
I pass the little pond in town just about every morning, but today I walked around the pond. So pretty and the weather was just perfect. I sat on one of the benches for about 10 minutes or so just enjoying being there.
Thought I'd might see different people out walking at this time of the morning but didn't see anyone. No animals either.
When I got back home before going in the house I sat on my swing for a little while too. The sky was clear and a bright blue by then.
I walked 6 miles.

When I walked, Ken left for Happy Trails. No work on the cabin today. He collected flat rocks for the patio here at the house. Hopefully we can get it finished before it snows.I made more cole slaw and cucumber salad with the last of the cabbages and cucumbers from the garden.
Made two more Eggplant Parmesans and also and we will have one for supper tonight and will freeze the other one. There are still more eggplants growing so maybe we can get another two meals out of them. Thank goodness for freezers. : ) I'll definitely plant eggplant again next year.
Ken came home with a load of rocks in the pickup. Should be able to get a lot of the patio finished now.
That's been my day so far and it's not over yet.

Comment Replies:Diana - I lived in Scotland for 4 years so understand about the scone biscuit/cookie thing. : ) I do believe that the Welsh Cookies are the same as girdle scones. I use a round cookie cutter to cut out the dough and then they are cooked on a griddle. Here is a link to a blog post of mine a couple of years ago. Though the recipe isn't there it shows how I make them.

It sounds like your garden did well this year. I've never tried growing eggplants. If I can remember, I think I'll give it a try next summer.

I agree with you on freezers! Ours is full of lots of fruit and vegetables from friends and the pick-your-own places. Lovely to cook something in February which you froze in September!
Karen - I am just catching up on your blog for this week. I love the scarves you are making. The last one your showed was just great. I think I missed your explanation of why you were making them. I never color my hair and (I colored my hair just once a long time ago and hated it), so I now have strands of white but it actually looks like I have done that on purpose so I don't mind. Have received compliments on it - go figure . Have a great day!
