Cucumber Salad

The book club went well Wednesday and everyone liked the book, The Rope except for one person.  Next months book is the Goldfinch which I'm just about done with and we picked the books for December and January.  Both sound like good ones.  My Wish List by Gregoire and The Third Hill North of Town by Noah Bly.

Ken picked me up and we went directly to church from there.  We started putting together the book of Romans in Spanish which will be sent to Mexico. Here's a row of tables where we worked.  There were people of all ages and we had a fun time. My spot is on the right and of course I'm not there because I took the picture.   The second woman on left is Bettye who you prayed for.  She is doing great!! : )
Got home late Wednesday night and ended up getting up late yesterday morning and just had time for a three mile walk before we left.
Didn't get a change to blog yesterday because we were back at church finishing up.  We spent the whole day there. We all put together 17,500 books, boxed them up and
they are ready to be shipped.

This morning got up my regular time and had my usual walk.  It was 50 degrees and cloudy.  I walked around town.  Saw two men walking dogs and a woman walking who I've seen once or twice before.  She walks with ear phones and I think doesn't even see me. : )

I noticed since yesterday morning the soy bean crop has been harvested.  Farmer Marvin did quick work.
I walked 6.4 miles.

I'm spending the day at home doing stuff that needs to get done around the house!!  I'd like to be outside too getting some things done but the it has started raining.

We are going to a BBQ late tomorrow afternoon and I've made a Cucumber Salad to take along.
I've turned these nice three cucumbers, though not from my garden, (Didn't grow any but maybe next year)
into this Sweet-Sour Cucumber Salad.
It is very easy and tasty.  Here's the recipe.
Sweet-Sour Cucumber Salad
  • 1/2 cup white vinegar
  • 1/3 cup salad oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon oregano
  • 3 medium to large cucumbers thinly sliced
Combine all ingredients
Cover and refrigerate at least 45 minutes to blend flavors
Makes about 12 servings and about 70 calories

Good to see Bettye doing so well. Looks like a great turnout for your book assembling. What will happen to them once they get to Mexico? Will they be going to churches there? Just curious.
The salad looks and sounds yummy. I make one very similar except it has red onions and dill instead of oregano in it. My boys love it!

Great new header! When a field is harvested, the whole world opens up again. My aunt and uncle far prefer a potato crop to a corn one. I pinned the recipe and will shortly be putting it together. Some cucumbers hanging around that I had no idea what to do with.

The cucumber salad looks delicious. I think it would go very well with BBQ. I'm impressed with the number of books your church prepared to send to Mexico. Your photo of the leaf is beautiful.

You do keep busy. That is a tremendous amount of work the church put together there. Way to go. The salad sounds good. I like cucumbers and onions together in a vinegar soak.
