Soup Recipe

Back to those chilly mornings again.  Only 28 degrees, but the wind has finally died down and the sun is shining brightly to warm things up.
This morning I stayed walking on the sidewalks along the road.  Went up to the end of Gray Rock, turned around and walked back home again.  Just saw a few runners out and the paper man in  his white van.  As I walked down the main road the paper man in his van went in and out of all the side streets.  We kept pace together and every time he came out of a side street there I was still walking down the main street.  Eventually I ended up going faster down the street than he was able to go down all the side streets and lost track of him.  Then later when I get home I was opening the front curtains and I laughed to see the white van go down my street!!

The Tuscan Soup I made for supper last night turned out really good.  We both liked it a lot.  The recipe didn't call for any meat in it but it think it would taste even better with some Italian sausage in it, even though I know without the sausage it is healthier!
Here's the recipe.
1 small onion
1 small carrot
1 Tablespoon olive oil
2 cans chicken broth (14-1/2 ounces each)
1 cup water
3/4 teaspoon salt
1/4 teaspoon pepper
1 can white kidney or great northern beans (15 ounces), rinsed and drained
2/3 cup small spiral pasta
3 cups fresh escarole or spinach.

1.  In a 2 qt saucepan, saute onion and carrot in oil until onion is tender.  Add the broth, water, salt and pepper; bring to a boil.  Stir in beans and pasta; return to a boil.

2.  Reduce heat; cover and simmer for 15 minutes or until pasta and vegetables are tender, stirring occasionally.  Add escarole or spinach; heat through.

Yields 4 servings.
1 cup is 196 calories.

I used spinach, and didn't add salt and pepper but added some oregano.
I used northern beans but didn't rinse or drain them, just dumped the whole can in as is.
We ate some homemade dill bread and butter along with the soup.

Remember that old truck Ken bought at an action we went to back in October of last year?  Well today he has taken it to a car show to try and sell it.  I decided to stay home.  I like going to car shows but just didn't want to sit around all day at one.

So I'm home today puttering around the house.  I've not done any work and don't plan on doing any.  I've done some reading and I'm going to make some more weave-it squares.  I'm really getting a lot of them done and will be finished with the baby blanket in no time at all.

Hopefully I will be getting a call that I have to go pick up Ken because the old truck sold.
I'm thinking we will be going out to eat for supper tonight.

So off I go to enjoy the rest of my day.

Your soup recipe sounds really good - I must try it. We have home made soup for lunch most days it's such a good healthy meal and great for dieters! I hope you manage to get your truck sold. Enjoy your day.

The soup recipe sounds good; I've copied it. I have everything on hand except the spinach, and I suppose without that it would still be good, but maybe wouldn't be "Tuscan".
